Dear Lisa: How can I save chipotle peppers in adobo sauce? So many recipes seem to call for 1 or 2 peppers and the rest of the can eventually goes to waste. Can I freeze them? -- D.T.
Dear D.T.: When cooking with those smoked jalapeños known as chipotle peppers, a little goes a long way. Both the peppers and the adobo sauce -- which is made with tomatoes, garlic, vinegar and spices -- can be frozen successfully.
Freeze any remaining peppers and sauce in small portions (an ice cube tray works well), or in a zippered bag or a freezer container. The next time you need some, just scoop out what you need.
Adding a spoonful of chipotles in adobo to mayonnaise makes a great chipotle mayonnaise which you can use in everything from potato salad to wraps, sandwiches and burgers.
Puree some in butter to serve with cornbread or polenta, or on steaks and grilled shrimp. Chipotles also make a great addition to salsas, refried beans and chili.
