Dear Lisa: I read your article on double cream. Is Double Devon Cream the same as double cream? Can you recommend a place where I can buy double cream? -- Lauren
Dear Lauren: Double cream is the rich, smooth, thick cream that is traditionally served with scones at teatime in England, and is also used in a variety of recipes. It is much thicker than the whipping cream found in our grocery stores, and can actually be difficult to work with if it is overwhipped and becomes too thick.
Double cream contains 48 percent butterfat, where our thickest creams contain between 36 percent and 40 percent butterfat.
Double cream and Double Devon Cream are the same type of cream. "Devon" is the prized region in southern England where the cows are raised and milked, and so it is proudly identified on the jar labels.
You can find double cream in the specialty cheese section in the deli of large grocery stores.
